Ignore my settings in the screenshots provided and use the setting I have instructed. This should stop your phone from syncing any photos from your Mac back onto your iPhone. Make sure Sync Photos is unchecked (screenshot provided). But doing this will not give you a backup of your images, so I suggest you have some kind of backup for your Mac.
Just use the drop down menu under Import To: to do that. This will import the images from your iPhone and place them in a folder of your choosing and then delete them from your iPhone all in one step. Choose Image Capture and below that, check off Delete after import. Open Image Capture with your iPhone connected to your Mac, in the bottom left corner you will see a drop down menu that will allow you to choose which app you want to open to download images from your iPhone (provides screenshot).
